What are your hours of operations?

We are open Wednesdays through Sundays from 4 pm to 9 pm.

 

What does your venue specialize in?

Cordivari's Restaurant in Brigantine, New Jersey, offers homemade pasta and both traditional and unique Italian dishes. This family-run BYOB establishment also serves local wine while maintaining a family-style atmosphere. Entrees are served individually.

 

What is the current reason one MUST come to your venue? 

Our Mediterranean Butter Boards are a tasty new trend. For only $16,tThey feature soft butter with goat cheese, prosciutto, walnuts, arugula, and fresh figs, topped with honey or balsamic vinaigrette, and served with fresh Italian bread.

 

What is the venue’s greatest feature?

What makes Cordivari’s stand out from the sea of Italian restaurants in our area is that they make their own pasta, every day, on the premises, from ravioli, gnocchi and spaghetti to fettuccine and capellini.


 

Tell us a little about your Chef?

Chef Jim Cordivari, a Holy Spirit High School graduate, began his culinary journey in 1976 at his family's restaurant, The Pirate's Den in Brigantine. After graduating from Widener University with a degree in restaurant and hospitality management, he supervised at Harrah’s Hotel and Casino. His family later bought and renovated a location on the White Horse Pike, naming it Tre Figlio. Chef Jim worked under Executive Chef Frank Mulino and took over as Executive Chef in 2002. Over the years, he worked at various places and eventually bought and reopened Mad Dog Morgan’s in Brigantine as Cordivari in July 2019.



 

What are some other special reasons to come visit?

Some of their most renowned dishes include Capellini Calabraise: shrimp, calamari, and lump crabmeat tossed in a house-made blush sauce, garnished with capers, green peas, and fresh basil served over capellini. The Pollo Princessa features sautéed chicken breast with crabmeat and asparagus, served with a light white wine sauce complemented by a touch of cream. Additionally, customers favor the Lobster Venetian, which consists of a Maine lobster cooked franchise style with jumbo shrimp and topped with a light white wine cream sauce. This dish is paired with lobster ravioli, made with house-made ravioli stuffed with lobster and ricotta in a basil cream sauce.

One of Chef Jim’s personal recommendations is the Pollo Natalie: sautéed chicken breast topped with prosciutto, fresh mozzarella, and capers, all presented in a white wine lemon butter sauce.
